Beet juice is so nutritious! Beetroot is an incredible vegetable. The benefits of beets are numerous! Beets are full of nitrates, which allow your blood vessels to open up for increased blood flow. Beets also contain vitamin C, folate, vitamin B6, magnesium, potassium, phosphorous, manganese, and iron.
Here are some of our favorite beet juice recipes!
Lemon Ginger Beet Juice Recipe
Ingredients
- 2 beets, scrubbed clean and tops trimmed
- 1 medium seedless cucumber
- 1-inch piece fresh ginger, scrubbed clean
- 1 medium lemon
PREPARE VEGETABLES
Chop the beets, cucumber, and ginger into thin pieces small enough to easily go through the juicer.
Cut away the yellow peel from the lemon, leaving most of the white pith and lemon flesh. Cut into slices and remove any seeds.
MAKE JUICE
Reserve about half of the lemon. Turn the juicer on and push everything through, alternating between the beets and the softer cucumber and lemon.
When everything but the reserved lemon has been juiced, stir the juice and taste for tartness.
Add the remaining lemon if you feel it can take it. Or if the beet juice is too tart, consider adding a couple scrubbed unpeeled carrots or a small cored apple. Serve over ice.
Beet Carrot Apple Juice
Ingredients
- 2 medium beets
- 1 apple of your choice
- 3 medium carrots, peeled
- 1 tablespoon chia seeds
PREPARE VEGETABLES/FRUIT
Wash and chop the vegetables and fruits in small pieces.
MAKE JUICE
Juice the beets, then the apples, then the carrots. Stir in the chia seeds and let soak for 5 minutes. Serve over ice.
Basil Beet Juice
Do you have a juicer? If you don’t, that’s okay! You can make beet juice with a high-powered blender and mesh strainer or cheesecloth. This beet juice recipe doesn’t require a juicer—you can make it with your blender!
Ingredients
- 1 large beet
- 1 large crisp apple
- 2-3 carrots
- ½ cup fresh basil leaves
- 1 ½ cups water
PREPARE VEGETABLES/FRUIT
Wash and chop the beet, apple, and carrots into chunks
MAKE JUICE
Place all ingredients in the blender and blend until smooth. Pour the juice through a mesh strainer or sieve. Press with a spatula to squeeze the rest of the juice out of the pulp. Serve over ice.
